I enjoy running on the River Trail, especially the part that backs up to Potter Park. It's interesting to hear the peacocks cry and to navigate your way around the geese.
Enjoy a meal at my favorite restaurant
The best place to go for diverse meal options is downtown East Lansing, but my favorite place is Altu's Ethiopian restaurant. While it's not "local cuisine," it tastes great, is inexpensive, and the service is fantastic. For your typical American meal, the Knights Cap offers upscale dining without the pretentiousness, and the food tastes good. Clara's offers decent food that's reasonably priced. Plus, it's in a train car, which is kind of cool.
Here's a doable bucket list for you to do in one day
Rent a bike near the capitol building in downtown and ride along the River Trail.

1. The first stop is at the capitol building, then head east and ride to East Lansing.
2. Ride around MSU campus and see Sparty.
3. Head back to Lansing, and stop for lunch at Altu's.
