Cerro San Cristóbal. You can walk, hike or cycle to the top and get a great view of Santiago.

Here's a doable bucket list for you to do in one day
1. Walk through Parque de las Esculturas
2. Go to la Vega Ventral
3. See the sunset from Cerro San Cristóbal
4. Eat empanadas and drink terremoto (lit. "earthquake") at la Piojera.
5. Walk downtown and see a street show (they're everywhere) and eat sopapilla and/or mote con huesillo.
My extra insider tip for you is
To move through Santiago you need to buy a BIP card in any metro station and charge it. This card allows you to get on the metro and bus.
