The Astrakhan Kremlin--it's one of the oldest in Russia.
Here's one fun activity you can do
Take a regular passage boat along the Volga River. The round-trip ticket is about $10 for more than a 2- hour voyage! It's not touristy, and that's what make it special. :)
Don't forget to check out one of my favorite places
The Volga River embankment. It's nice to walk along it and get lost wandering the old streets near it.
Enjoy a meal at my favorite restaurant
The local must-eat is definitely shaurma at Dymkoff (spelled Дымкофф in Russian). Astrakhan is the city of hookah and shaurma. So, do both while you're here.

If you're visiting in summer (July-August), go to any travel agency here and book a bus trip to the lotus fields at the Astrakhan State Nature Reserve. You can hardly find them anywhere else in the world.
