Here's one fun activity you can do
You can rent bikes by the hour or day and enjoy the bike paths around town. Hit the Cherry Creek bike trail which is off the city streets and safe for all bicyclists and joggers. A great place to take a break is Confluence Park.
Don't forget to check out one of my favorite places
Santa Fe Art District on the first Friday of the month. It's full of local artists and has a festive atmosphere.
Enjoy a meal at my favorite restaurant
There are so many places, but Denver has one of the nation’s best sushi bars, called Sushi Den.
Here's a doable bucket list for you to do in one day
1. The State Capitol Building
2. Denver Mint
3. Central Shopping District of 16th Street Mall and Denver Pavilions

All of these are within walking distance to each other, but you can also take the free 16th Street shuttle to the other end of the mall where the night life comes to life.
